Sausages in wine

- 2 tablespoons olive oil
- 500g fresh sausages
- 200g onion
- 3 cloves garlic
- Salt
- 3 bay leaves
- 8 peppercorns to taste
- 200ml white wine
- Heat a large frying pan over medium-high heat with a couple of tablespoons of olive oil. When it's very hot, add 500g of fresh sausages and brown them for about 5 minutes, turning them over so they cook evenly.
- Once they are well seared, remove the sausages and set them aside. Leave the rendered fat in the pan, as we will use it for the next step.
- Meanwhile, peel and thinly slice 200g of onion and mince 3 cloves of garlic as finely as possible.
- Return the frying pan to the heat, this time over medium-low heat, and add the onion along with the minced garlic. Season lightly with salt to help the onion soften and release its juices.
- Cook the onion for about 10 minutes, stirring occasionally, until it is soft and translucent. At that point, add 3 bay leaves and 8 peppercorns. Place the sausages back on top of the softened onions and pour in 200 ml of white wine.
- Turn up the heat for a few minutes to allow the alcohol to evaporate and the wine to reduce slightly.
- Then, cover the pan and let it cook for another 5 minutes over low heat, making sure the sauce doesn't reduce too much. Serve the sausages on their own or with your favorite side dish.
