Mediterranean-style free-range chicken with tomato, olives and herbs

Ingredients for 4 people
  • 1 whole free-range chicken
  • Salt and pepper to taste
  • 1 medium red onion
  • ½ white onion
  • 2 cloves of garlic
  • 2 bay leaves
  • 125 ml white wine
  • 2 teaspoons of aromatic herbs (thyme, oregano)
  • Chicken broth (approximately 400-500 ml)
  • A pinch of ground saffron
  • Olive oil

For the finishing touch:

  • A handful of olives (black, green, or both)
  • Freshly chopped parsley
Preparation
  1. Chop the chicken pieces, season with salt and pepper, and brown them in hot oil until well sealed. Remove them and set aside with their juices.
  2. In the same pan, sauté the red and white onions, garlic, and bay leaf over medium heat. Adjust the oil if necessary.
  3. Return the chicken to the pan, add the white wine, and scrape the bottom of the pan to loosen the flavors. Let the alcohol evaporate for 2–3 minutes.
  4. Add the stock, herbs, and saffron. Cook for 20–25 minutes over medium heat until the chicken is tender and the sauce has reduced.
  5. In a separate pan, sauté chopped garlic and tomatoes with salt and a splash of vinegar until softened and reduced.
  6. Stir in the olives and the tomatoes with their juices.
  7. You can plate it garnished with chopped parsley.
