Mediterranean-style free-range chicken with tomato, olives and herbs
HEALTHIER RECIPES

- 1 whole free-range chicken
- Salt and pepper to taste
- 1 medium red onion
- ½ white onion
- 2 cloves of garlic
- 2 bay leaves
- 125 ml white wine
- 2 teaspoons of aromatic herbs (thyme, oregano)
- Chicken broth (approximately 400-500 ml)
- A pinch of ground saffron
- Olive oil
For the finishing touch:
- A handful of olives (black, green, or both)
- Freshly chopped parsley
- Chop the chicken pieces, season with salt and pepper, and brown them in hot oil until well sealed. Remove them and set aside with their juices.
- In the same pan, sauté the red and white onions, garlic, and bay leaf over medium heat. Adjust the oil if necessary.
- Return the chicken to the pan, add the white wine, and scrape the bottom of the pan to loosen the flavors. Let the alcohol evaporate for 2–3 minutes.
- Add the stock, herbs, and saffron. Cook for 20–25 minutes over medium heat until the chicken is tender and the sauce has reduced.
- In a separate pan, sauté chopped garlic and tomatoes with salt and a splash of vinegar until softened and reduced.
- Stir in the olives and the tomatoes with their juices.
- You can plate it garnished with chopped parsley.
