- 100 ml of olive oil
- 4 cloves of garlic
- 1 onion
- 100 g Swiss chard
- 100 g spinach
- 100 g cabbage
- 100 g carrots
- 1 sprig of parsley
- 1 leek
- 1 small potato
- 1 bay leaf
- 3 liters of water
1. In a pot sauté all the cut up vegetables in the oil; add the bay leaf and water.
2. Bring to a boil over high heat and then lower the heat to medium.
3. Let it cook for 1 hour and 30 minutes if you make it in a regular pot. If too much water evaporates, add a little more water or cover the pan. If you make it in a pressure cooker, cook about 30 minutes.
4. Strain to remove the vegetables and the broth is ready.
