Chicken breasts stuffed with mushrooms with chestnut cream

- FOR THE CHICKEN:
4 units of chicken breasts
8 whole mushrooms
4 onions shallots
Half a glass of white wine
Half a glass of chicken broth
Extra virgin olive oil
Salt
Black pepper
Rosemary
- FOR THE CHESTNUT CREAM:
500g peeled chestnuts
Half a liter of chicken broth
Quarter liter of cooking cream
Salt
White pepper
Star anise

- PREPARATION OF CHICKEN BREASTS:
- Chop the shallots and mushrooms very finely, and sauté them with oil, salt and pepper.
- Once the previous mixture is ready, spread the salted chicken breasts and add it on top. Then, roll the chicken and prepare it until golden brown in the same saucepan, adding a little more oil if necessary.
- Add the rosemary, white wine and chicken broth and let it prepare for 15-20 minutes.
- PREPARATION OF CHESTNUT CREAM
- Pour the milk into another saucepan and add the chestnuts. After 5 minutes, add the white pepper, salt and an anise star.
- Let it cook for 2 hours over low heat.
- Once this time has passed, add the cream and cook for a few minutes. Then remove from heat.
- Remove the anise star and blend completely until obtaining a cream.
- PRESENTATION:
- Cut the supremes into medallions and add the chestnut sauce
- Garnish with rosemary and serve
