Baked squab stuffed with onion, bacon and nuts

1 squab
1 medium onion
3 slices bacon
1 tablespoon roasted peanuts
1 tablespoon pistachios
1 tablespoon Dijon mustard
1 tablespoon Pedro Ximénez vinegar reduction
Margarine
Ground pepper
Salt
1. Clean the squab, season with salt and pepper and place in an oven-safe container.
2. Chop the onion, season with salt and pepper and add the bacon cut into small pieces, the peanuts, the pistachios, the mustard, the vinegar and the tablespoon of melted margarine.
3. Mix and fill the squab to taste and use the leftovers to cover the base of the container.
4. Cover the squab and the base with a layer of margarine and preheat the oven to approximately 230ºC. Place in the oven until the squab has a uniform golden brown all over the skin.
