Ingredients for 4 people

1 kg of baby squid

Virgin olive oil

Garlic, parsley, half an onion 1 Cayenne (optional), bay leaf, squid ink, 1 bag White wine, Fried tomato

1 Knorr fish stock tablet

Boiled egg

Water

Preparation
  1. Clean the baby squid, being careful not to break them in order to fill them, reserving the tentacles.
  2. In a saucepan add a little oil, add crushed garlic and parsley, add the finely chopped onion and sauté well, add the small cut squid tentacles and put the fried tomato, leave to fry for about 5 minutes and rectify with salt .
  3. To this mixture we add the cooked egg very well minced, mix everything well and let cool.
  4. Fill the squid with the previous mixture and reserve.
  5. In a saucepan put a little oil not much, put the cayenne garlic and parsley crushed, the bay leaf, the fish stock, sauté and add the stuffed squid, sauté for a while well, add the squid ink, dissolved in white wine, cook for 5 more minutes and thicken to taste with a little cornstarch dissolved in water. Bring to a boil carefully so that they do not stick to thicken.
