Chicken drumsticks with Curry

Ingredients for 4 people
  • 8 chicken drumsticks
  • 3 onions
  • 150 ml. of olive oil
  • 2 cloves of garlic
  • Salt
  • 3 italian green peppers
  • Ground black pepper
  • 1 spoon of curry
  • Cayenne
  • 2 spoons of fried tomato sauce
  • 100 ml. of white wine
  • 250 ml. of coconut milk
  • 350 ml. of chicken stock
  • Cornstarch​ (Sauce thickening)
  • Fresh parsley

 

Preparation

1. Chop the onion into small pieces, and do the same with the green peppers. Cut the garlic into small pieces too, or crush it in the mortar.

2. Put the oil in a pot, heat and put chicken drumsticks seasoned to browning. When chicken drumsticks are as we want, reserve.

3. Add to the oil the onion first, move and then add green peppers, the garlic and the cayenne. Leave 10 or 15 minutes until the vegetables soften. Add the fried tomate sauce and the curry. Move another time and add the white wine. Stir again and add the chicken drumsticks.

4. Stir and add the chicken stock, and the coconut milk. Move everything well and cover the pot.

5. When the valve rises, put the pot on a lower heat and cook for 5 minutes if it is in a fast pot. If it is in a casserole, let cook between 25 or 30 minutes and control the chicken stock, and if it evaporates a lot, add a little water.

6. Remove the chicken drumsticks and thicken the sauce with a little cornstarch dissolved in cold water. Grind with a blender, rectify salt and mash.

7. Place the chicken drumsticks on a plate, add the curry sauce, and sprinkle little pieces of parsley or cilantro to decorate.

As a side dish we can put basmati rice, or sauteed mushrooms, whatever we want.
