Tears of Iberian pork with tomato

Ingredients for 4 people
  • 1 kg crushed tomatoes
  • 800 g Iberian pork cracklings
  • 2 onions
  • 1 red bell pepper
  • 2 green bell peppers
  • 6 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper
  • Sugar
  • Ground thyme
  • Parsley (for garnish)
Preparation
  1. Peel and slice 2 cloves of garlic and prepare a paste in a mortar with a drizzle of oil. Place the meat in a bowl, add salt and pepper to taste, and sprinkle with thyme. Add the garlic paste, mix well, and let it rest to allow the flavors to meld.
  2. For the sauce, mince 2 cloves of garlic and sauté them in a saucepan with a little oil. Add a finely chopped onion and cook until soft. Stir in the crushed tomatoes, a pinch of salt, and a touch of sugar, and cook over medium heat for about 25-30 minutes. Then, blend or pass through a food mill until you have a smooth sauce. Set aside.
  3. Slice the remaining garlic, the other onion, and the bell peppers into thin strips. Cook everything in a pan with oil until softened. Once cooked, remove it and place it on paper towels to absorb the excess oil. Grill the meat for a few minutes, until browned on the outside and cooked through.
  4. To serve, first place a layer of tomato sauce on the plate, then add the vegetables, and finally top with the meat. Garnish with a little parsley.
