Summer octopus salad with avocado and lemon vinaigrette

- 300g canned cooked octopus
- 2 ripe avocados
- 12 cherry tomatoes
- 1 small cucumber
- 1/2 red onion
- Mixed leafy greens (arugula, lamb's lettuce, or baby greens)
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt
- Black pepper
- Sweet or hot paprika (optional)
- Chopped fresh parsley
- Drain the octopus and slice it into bite-sized pieces.
- Wash the cherry tomatoes and halve them.
- Peel the cucumber and dice it.
- Dice the avocado and thinly slice the red onion.
- Arrange the leafy greens in a serving dish and add the remaining ingredients.
- Prepare the vinaigrette by whisking together the oil, lemon juice, a pinch of salt, and pepper.
- Dress the salad just before serving.
- Sprinkle with paprika and fresh parsley.
