Ingredients for 4 people
  • 1 pork tenderloin
  • 1 shallot
  • 2 garlic cloves
  • 350g mushrooms
  • 10g cornstarch
  • 150ml beer
  • 250ml vegetable stock
  • Extra virgin olive oil
  • Salt
  • Ground black pepper
Preparation

1. Grate the garlic cloves, peel and thinly slice the shallot, and chop the mushrooms into small pieces.

2. Cut the beef tenderloin into medallions and brown them in a pan with a little oil, removing them once browned.

3. In the same pan and with the same oil, sauté the garlic and shallot until they begin to brown.

4. Add the mushrooms and stir constantly until they take on color.

5. Sprinkle in the cornstarch and mix well to combine it with the other ingredients.

6. Pour in the beer and let the alcohol evaporate.

7. Add the beef medallions, season with salt and pepper to taste, and pour in the vegetable stock.

8. Cover the pan and simmer over low heat for 20 minutes. Remove the medallions and blend the remaining meat to obtain a smooth sauce.

9. Serve the tenderloin with your favorite side dish, drizzling it with the sauce for a juicy and flavorful result.
