Chicken thighs with bacon and mushrooms

- Chicken thighs
- 150g bacon strips
- 300g sliced mushrooms
- 1 large onion
- 3 garlic cloves
- 150ml white wine
- 200ml chicken stock
- 2 tbsp olive oil
- Salt and pepper
- Chopped fresh parsley
- Season the chicken butts with salt and pepper and fry them in a frying pan with a little olive oil until the skin is golden brown. We withdraw and reserve.
- In the same pan, brown the bacon for a few minutes. Add the julienned onion and chopped garlic and cook until the onion is tender.
- Add the sliced mushrooms and cook until they lose all their water.
- Pour in the white wine and let it reduce for a couple of minutes. Add the chicken broth and mix well.
- We place the chicken butts in a baking dish and spread the bacon and mushroom mixture on top along with the sauce.
- Bake at 190°C for 40-45 minutes or until the chicken is golden and cooked through.
- Sprinkle with fresh chopped parsley and serve hot.
