Chicken thighs with bacon and mushrooms

  • Chicken thighs
  • 150g bacon strips
  • 300g sliced ​​mushrooms
  • 1 large onion
  • 3 garlic cloves
  • 150ml white wine
  • 200ml chicken stock
  • 2 tbsp olive oil
  • Salt and pepper
  • Chopped fresh parsley
Preparation
  1. Season the chicken butts with salt and pepper and fry them in a frying pan with a little olive oil until the skin is golden brown. We withdraw and reserve.
  2. In the same pan, brown the bacon for a few minutes. Add the julienned onion and chopped garlic and cook until the onion is tender.
  3. Add the sliced ​​mushrooms and cook until they lose all their water.
  4. Pour in the white wine and let it reduce for a couple of minutes. Add the chicken broth and mix well.
  5. We place the chicken butts in a baking dish and spread the bacon and mushroom mixture on top along with the sauce.
  6. Bake at 190°C for 40-45 minutes or until the chicken is golden and cooked through.
  7. Sprinkle with fresh chopped parsley and serve hot.
