  • 1 whole chicken breast
  • Empanada dough
  • 150-200 g mixed mushrooms
  • 1 onion
  • 1 garlic clove
  • 200 ml heavy cream
  • Parmesan cheese
  • Salt
  • Black pepper
  • Nutmeg
Preparation
  1. Slice the chicken breast, season with salt and pepper to taste, and dice it. Cook it in a skillet with a little oil until cooked through and set aside.
  2. In the same skillet, add the chopped onion and cook over medium-high heat until translucent. Add 1 minced garlic clove and cook with the onion for 10 minutes over medium heat. Add a pinch of salt.
  3. Stir in the mixed mushrooms and cook until tender.
  4. Return the reserved chicken to the skillet and add the cream. Season with 1 teaspoon of salt, 1 teaspoon of pepper, and 1/2 teaspoon of nutmeg. Mix well.
  5. Grate Parmesan cheese over the mixture and combine evenly.
  6. Roll out one half of the pastry dough onto a baking sheet and place the filling on top. Cover with the other half of the dough and seal the edges. Make a small slit in the top to allow steam to escape. Bake at 200°C with top and bottom heat for 35 minutes, checking occasionally until the empanada is golden brown.
