- 1 whole chicken breast
- Empanada dough
- 150-200 g mixed mushrooms
- 1 onion
- 1 garlic clove
- 200 ml heavy cream
- Parmesan cheese
- Salt
- Black pepper
- Nutmeg
- Slice the chicken breast, season with salt and pepper to taste, and dice it. Cook it in a skillet with a little oil until cooked through and set aside.
- In the same skillet, add the chopped onion and cook over medium-high heat until translucent. Add 1 minced garlic clove and cook with the onion for 10 minutes over medium heat. Add a pinch of salt.
- Stir in the mixed mushrooms and cook until tender.
- Return the reserved chicken to the skillet and add the cream. Season with 1 teaspoon of salt, 1 teaspoon of pepper, and 1/2 teaspoon of nutmeg. Mix well.
- Grate Parmesan cheese over the mixture and combine evenly.
- Roll out one half of the pastry dough onto a baking sheet and place the filling on top. Cover with the other half of the dough and seal the edges. Make a small slit in the top to allow steam to escape. Bake at 200°C with top and bottom heat for 35 minutes, checking occasionally until the empanada is golden brown.
