Chicken butts in wine

6 chicken legs
2 tablespoons olive oil
150g diced pancetta
20 peeled French onions
3 finely chopped garlic cloves
750ml red wine
500ml chicken broth
1 tablespoon tomato sauce
Herbs: Thyme, parsley, bay leaf
250g button mushrooms, cleaned and halved
Salt and pepper to taste

1. Season the chicken legs with salt and pepper and, in a large saucepan with hot oil, brown them on both sides. Remove and set aside.
2. In the same saucepan, add the pancetta and cook until crisp and golden. Add the green onions and cook until golden. Add the garlic and cook for one more minute.
3. Return the chicken to the saucepan. Stir in the red wine and chicken broth until the liquid almost completely covers the chicken. Add the tomato sauce and herbs and bring to a boil.
4. Reduce the heat, cover, and let simmer for approximately 25 minutes. Add the mushrooms and cook for another 15 minutes.
5. If necessary, transfer all ingredients to a bowl and reduce the sauce to the desired consistency over high heat (season to taste).
6. Add everything back to the casserole to heat, then serve hot and garnish with chopped fresh parsley.
