Chicken butts with potatoes and apple

- Chicken thighs
- 1 apple
- 1 onion
- 3 potatoes
- 200 ml vegetable stock
- A handful of fresh parsley
- 1 lemon
- 2 cloves of garlic
- Extra virgin olive oil
- In a mortar, crush the garlic cloves with the fresh parsley, lemon juice, a generous drizzle of extra virgin olive oil, and a pinch of salt until you have a smooth paste.
- Coat the chicken completely with this marinade and let it rest to absorb the flavors. Meanwhile, slice the onion into julienne strips and the apple into wedges, then combine them.
- Place the chicken on a wire rack in the oven and put a tray of the vegetables and garnish directly underneath. This way, the fat released by the chicken will drip onto the vegetables and apple, creating a delicious sauce. Collect this juice and transfer it to a saucepan to reduce.
- To serve, arrange the vegetables and garnish on a platter, place the chicken on top, and serve with the reduced sauce in a gravy boat.
