Caprese chicken breast with pesto

4 chicken breasts
2 ripe red tomatoes
2 mozzarella balls
fresh basil leaves
pine nuts
virgin olive oil
salt and black pepper to taste
Pesto Sauce
30 g Parmesan cheese
fresh basil
Half a garlic clove
1 tablespoon pine nuts
80 ml virgin olive oil
salt to taste
- PESTO SAUCE: Place all the ingredients in a blender and blend.
- Place the chicken breasts on a griddle pan with a little olive oil and fry for one minute on each side.
- Remove them and make three or four cuts with a sharp knife, without cutting them all the way through. Place a fresh basil leaf, a slice of tomato, and a slice of mozzarella in each cut.
- In a baking dish, spread a little pesto sauce on the bottom and place the chicken breasts on top. Place the dish with the chicken breasts in the preheated oven and cook at 190°C for approximately 25 minutes.
- Serve with the pesto sauce on top and sprinkle with toasted pine nuts.
