CONSTANT QUALITY: All of our products are controlled by our Quality Department to comply with the agreed technical specifications. All of our production processes and logistical processes are audited and certified according to the rules ISO 9001. Our Hazard Analysis System and Critical Control Point (APPCC) has been developed based on the legislative requirements which set out the hygiene rules of foodstuffs (Reglamento 852/2004); Also, based on legislative requirements which set out the rules of hygiene of products from animal origin (Reglamento 853/2004), as well as the rules on food handlers (Real Decreto 202/2000).
APPCC is a systematic and preventive procedure recognized internationally to address the biological, chemical and physical dangers through the anticipation and prevention. The APPCC system ensures a better understanding of the stages of the production process, a more precise control those which may appear a risk and a more effective and speedy response to any possible eventuality.
For a better study and implementation of control in production processes, in each of them, we develop the following aspects:
Product description or output products.
Identification of use to be used for.
Development of a flowchart of the process.
Description of each phase or production stage and the actions undertaken.
Control chart design, indicating for each phase or stage production, the potential hazards, preventive measures taken to reduce to acceptable levels the risks, critical limits, a surveillance system, some corrective measures and a system of records of proceedings and inspections taken.
